Ingredients

These are only a few flavorings but highly flavored ingredients for perfect savory doughnuts.

For the Donuts:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 tsp salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper - adjust according to taste
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • Vegetable oil for frying

For the Filling:

  • 1 cup fresh crab meat, cooked, flaked, and cleaned
  • 1/2 teaspoon chilli flakes
  • 1 small red chilli, finely chopped
  • 1/4 cup cream cheese, softened
  • 1 tbsp chives, finely chopped
  • Black pepper and salt, to taste

For Garnish:

  • Fresh parsley, chopped
  • A sprinkle of paprika
  • Lemon wedges (optional)

Directions

Step 1: Make the Dough

  • In a large mixing bowl, whisk together the flour, baking powder, salt, paprika, and cayenne pepper.
  • In another bowl, whisk eggs, milk, and melted butter together until well combined.
  • Knead gradually by adding the wet ingredients into the dry ones until getting a smooth dough. Let rest for 10 minutes.

Step 2: Prepare the Crab Filling

  • In a medium-sized bowl, combine the crab meat, chilli flakes, chopped red chilli, cream cheese, and chives.
  • Season with salt and pepper to taste. Mix properly so that the fillings should be smooth and even.

Step 3: Fill the Doughnuts

  • Divide the dough into small portions, about the size of a golf ball, and flatten each one.
  • Place a teaspoon of crab filling in the middle of each dough ball. Seal the edges by carefully wrapping the dough around the filling into the shape of a ball.

Step 4: Fry the Doughnuts

  • Heat vegetable oil in a deep pot or fryer until it reaches 350°F (175°C).
  • Fry the doughnuts in hot oil for 3 to 4 minutes, or until golden brown, turning to cook on the second side.
  • Using a slotted spoon, remove the doughnuts and drain on paper towels.

Step 5: To Serve, Garnish

  • Sprinkle the warm doughnuts with chopped parsley for garnish and a sprinkle of paprika just for coloring.
  • Serve with lemon wedges for that sour kick.

Serving Suggestions

These doughnuts are best when served hot and make not only delicious but also very savory appetizers or snacks. They go great with any form of sour dipping sauce, like garlic aioli or sweet chilli sauce.
